Calcium carbonate (CaCO3), also known as chalk, is a weak base.

With regard to brewing, calcium carbonate should only be used to make a Lactobacillus starter. See Sour beer. To be very clear: Never ever use calcium carbonate for any other brewing purpose.[1]

In wine, calcium carbonate can sometimes be used to lower TA, although potassium carbonate or potassium bicarbonate are usually a better choice.[citation needed]
